Suji ka halwa is a simple pudding that is also traditional. It is made with fine semolina which is roasted in ghee until aromatic and water.
You can enjoy suji halwa as a dessert or with our special nagori recipe.
Ingredients:
1 cup semolina
1/4 cup ghee/oil
1 cup sugar
1/2 teaspoon green cardamom powder
4 cups water
Instructions:
Heat ghee/oil in a heavy bottom pan on medium low heat.
Add semolina and roast it till it turns golden brown and aromatic.
Add water (be careful) and sugar and mix it well stirring continuously.
At this point you can switch off the heat if the desired consistency of halwa is reached.
Mix cardamom powder into the halwa.
Serve hot.
Notes:
You can roast semolina according to your likeness.
You can add saffron threads after you add water.
You can garnish this with chopped almonds.
You can also add raisins before serving.
Be very careful when you add water as it tends to sputter.
