Mexican-Style Black Beans

Black beans are a great source of protein and fiber. This simple, flavorful, and easy recipe can become your new favorite side dish!


We combine these with rice and make burritos, tacos, and our family favorite, chimichangas.


 

Ingredients:

  • 3 cans black beans (15 oz can)

  • 2 tablespoon oil

  • 3 finely chopped green chillies (optional)

  • 1 medium onion (finely chopped)

  • 1/4 cup chopped cilantro leaves

  • 1/2 lemon's juice

  • 1 bay leaf

  • 2 1/2 teaspoon taco seasoning

  • 1 1/2 teaspoon cumin powder

  • 1 teaspoon dried oregano

  • 1 1/2 teaspoon black pepper powder

  • salt to taste

Instructions:

  • Heat oil on medium high heat in a skillet.

  • Add bay leaf and onion. Sauté until onions are translucent.

  • Now add the cans of beans with liquid and taco seasoning, oregano, cumin powder, black pepper powder and salt.

  • Give it a stir and bring to a boil. Let it simmer for 15 -20 minutes, so all the flavors blend in with beans.

  • Switch off the heat when desired consistency is reached.

  • Garnish with cilantro and sprinkle with lemon juice to serve.

Notes:

  • You can add more green chillies or a dash of cayenne pepper to make the beans more spicy.

  • Instead of lemon, you can use a lime's juice.
