This treat is made during Rakhsha Bandhan, the Indian festival that celebrates brother-sister bonds.
Meethi seviyan is a very easy recipe that only requires a minimum of 3 ingredients! Be sure to give this recipe a spin during the festival of Raksha Bandhan in mid-August.
Ingredients:
1 cup fine vermicelli (seviyan), crushed
4 tbps white granulated sugar
1-2 tbsp water
1 tsp ghee (for roasting)
1/4 tsp green cardamom powder (optional, but recommended)
a handful of chopped nuts (optional)
Instructions:
Melt the ghee in a heavy-bottom saucepan. Add in vermicelli.
Roast the vermicelli on medium-low heat until brown.
Add in the sugar. Evenly coat the vermicelli with sugar by tossing.
Sprinkle a tablespoon of water onto the vermicelli and let the sugar dissolve into the vermicelli.
Add in the cardamom powder and nuts, if using.
Let the sugar-water evaporate from the vermicelli on low heat, stirring frequently.
Switch off the heat and transfer the vermicelli onto a greased or parchment papered tray. Press the vermicelli together with a spatula of the back of a spoon.
Let it sit at room temperature to set for about one hour.
Once set, cut the vermicelli brick into equal squares.
Notes:
Crush the vermicelli in the packet itself before measuring it out.
Do not roast the vermicelli on high heat. It could burn and end up tasting bitter.
Be patient. Do not add more water to the vermicelli even if it looks dry, as the sugar will soon release it's own water.
