Besan Papdi (Chickpea Flour Crackers)

Besan papri is made with chickpea flour, papdi is thin crispy cracker bursting with flavor of fresh herbs.
This is traditionally made during Holi and Diwali festival. You can also enjoy it as a tea time snack.

Servings: 10-12 papdis
Ingredients:
1 cup chickpea flour (besan)
1/4 teaspoon carom seeds
1/2 teaspoon red chilli powder
1/4 teaspoon turmeric
2 tablespoon finely chopped fresh fenugreek leaves (methi) or 1 tablespoon dried fenugreek leaves (kasoori methi)
1 teaspoon salt or to taste
1 tablespoon of mustard oil
mustard or vegetable oil for frying
water as needed
Instructions:
Sieve chickpea flour and salt together in a large bowl.
Add red chilli powder, turmeric powder, carom seeds, chopped fenugreek leaves. Mix well with a fork.
Knead into a very stiff and hard dough by adding a tablespoon of water at a time.
Cover and rest the dough for 3o minutes.
Divide the dough into 10 - 12 equal portions.
Toss the dough portions with mustard oil .
Now roll them into 5-6 inches disk using chickpea flour if needed.
Do the same with rest of the dough.
Spread the disks on a piece of cotton cloth and cover them while all of the disks are rolled out.
Heat oil in a pan.
Deep fry the papdis on medium heat one by one from both sides until golden brown.
Take them out on a paper towel.
Cool the papdis and store them in airtight container for 15 -20 days.
Notes:
Very less water is needed while making the dough.
Roll the papdis thin.
